Pizza Dough-My Way


My go-to recipe for pizza

Makes 2 large crusts

For 2 Person(s)


  • 430 g water
  • 3 tsp yeast
  • 2 tsp sugar
  • 20 g olive oil
  • 600 g bread flour
  • 2 tsp salt
  • 10 g cornmeal
  • 1 tsp dried oregano

Pizza Dough-My Way Directions

  1. Place water into bowl. Heat 2 min/ 37C/ sp2
  2. Add yeast, sugar, olive oil. Heat 2 min/ 37C/ sp2
  3. Add flour, salt, cornmeal, dried oregano
  4. Knead 4 min on interval speed
  5. Transfer dough into oiled bowl, cover with plastic wrap. Let proof for 45 minutes. Punch down. Let rise for another 30 min.
  6. Divide into 2 portions, form into balls...roll out and form your pizza.
  7. I parbake the crust at 450F for 10-12 min. Let cool.
  8. Proceed with toppings and bake in hot oven (450F) until cooked.

Recipe notes

I use this combination of flours for my pizza dough: 300 g white bread flour, 100 g ww bread flour or rye flour, 100 g semolina, 100 g 00 flour; just as long as the quantity totals 600g.
