Preheat oven to 200C. Greece a 24-hole mini muffin tin.
Process the flour, parmesan and herbs in thermoix for 20 seconds speed 5.. Add the butter and process 5 seconds spoeed 5 until the mixture forms fine crumbs. Add water and process 5 seconds speed 6 until mixture forms a pastry.
Roll 2 tsp of pastry into balls, flatten and place in muffin tin. Cook 10 mins until pastry is golden.
Fill pastry shells with pesto and cheese then top with tomato. Bake for 10 mins until tomato softens. Serve on platter with basil to garnish
