Chilled Zucchini Soup


Coconut combinations are a hit now a days, enjoy it in a fresh summer evening to refresh your family and guests. It's a vegetarian dish. Fresh and Healthy.

  • 50 g White onions
  • 1 clove of garlic
  • 550 g Zucchini chopped
  • 50 g Cucumber
  • 450 ml Water
  • 2 tbsp Vegetable stock
  • 30 g Fresh mint leaves
  • 300 ml Coconut water
  • 200 g Plain Yoghurt
  • 1 tsp fresh black pepper
  • 1 tsp grind salt

Chilled Zucchini Soup Directions

  1. thermomix Method
  3. 1- Chilled your 2 lt. thermoserver in the fridge for at list 1 hour.
  5. 2-Add into the mixing bowl garlic, onions and 200 gr. of zucchini, chopped 10sec/speed 5
  7. 3-Scrape down the mixing bowl’s sides with the spatula and add the coconut oil and sauté for 3min/50C/sped1
  9. 4- Add reamin zucchini with cucumber chopped  Vegetable stock and water. 10min/stir function 
  10. 5- Place into the bowl mint, coconut water, 60sec/speed 8-10 for puree.
  11.  6-Add yogurt 5sec/speed 5, salt and pepper to taste.
  12. 7- Refrigerate for 3 hours if possible and served.

Recipe notes


No time time to refrigerate it, crush 200 g aprox, of  ice  and add 250 of water water, instead of adding 450 of water.

Reserve some mint leaves and decorate with dry shredded coconut.
