Super yummy muffins and healthy too!!!  Great snacks for the hungry little ones (or adult ones!)

Wet Ingredients

  • 6 large Medjool dates
  • 2 large eggs
  • 70 g Coconut oil
  • 2 large bananas
  • 1 Ripe Pear (core removed and cut into 4 - leave skin on)1
  • 1 teaspoon Vanilla extract or paste (optional)

Dry Ingredients

  • 160 g Flour
  • 5 g baking powder
  • 30 g Cacao powder or Baking cocoa

Chocolate, Pear and banana muffins - dairy and sugar free Directions

  1. Turn on oven to 325 F.
  2. Place all the wet ingredients into TM bowl and mix/chop on speed 6 for 10 seconds.
  3. Scrape sides.
  4. Add dry ingredients and mix for 5 seconds speed 4 reverse.  
  5. Scrape sides if mixture not fully combined and mix for further 2 seconds speed 4 reverse.
  6. Place mixture into muffin trays and bake for 12 minutes or until skewer comes out clean.

Recipe notes

These are super delicious moist muffins.  Yummy served warm with chocolate cashew cream or berries.



I have made these with a little Quinoa flour too.  Replace the 160G Flour with - 60G Qunioa flour and 100g Flour (white, wholemeal etc).  This boosts the protein content, but is disguised by the chocolate and fruit!!
