Almond, oat & chocolate chip cookies (vegan)


These cookies are our family favourite! Crunchy on the edges, chewy in the middle! Plus a little more healthful than traditional choc chip cookies thanks to the oats and almonds!

For the cookies

  • 1 tablespoon ground flax or chia seeds
  • 3 tablespoons water
  • 150 grams rolled oats
  • 180 grams raw almonds
  • 60 grams vegan butter/margarine or coconut oil
  • 60 grams almond or peanut butter
  • 100 grams coconut sugar
  • 60 grams organic cane sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 60 grams dairy-free chocolate chips

Almond, oat & chocolate chip cookies (vegan) Directions

  1. Pre-heat oven to 350ºf and line 2 baking trays with parchment or silicone baking mat
  2. In a small bowl, combine ground flax and water, set aside.
  3. Weigh in oats, place m/c in lid and mill for 15 seconds/speed 10. Set aside in large bowl.
  4. Weigh in almonds, place m/c in lid and mill for 10 seconds/speed 10. Set aside in large bowl, with oat flour
  5. Weigh in vegan butter/coconut oil, almond/peanut butter, both sugars, vanilla and reserved flax mixture. Place m/c in lid and mix 1 min/speed 3.
  6. Add reserved oat and almond flour to mixing bowl, plus baking soda, baking powder and salt. Place m/c in lid and mix 40 seconds/speed 3-4.
  7. Weigh in chocolate chips, place m/c in lid and mix 20 seconds/speed 2-3.
  8. Using a tablespoon, scoop out 1 tablespoon mounds of dough (It will be a bit sticky), leaving a couple of cm's between each one. No need to flatten the balls, they will spread as they bake.
  9. Place in the oven and bake for 12-14 minutes. They will be quite soft coming out of the oven, however, they will harden as they cool. Let cool for a few minutes before placing on a cooling rack to cool completely.

Store in an air-tight container.

These cookies freeze well. The dough can also be frozen. Thaw dough, and bake :)
