"Afternoon pick-me-up" PROTEIN BALLS

Ingredients

  • 8 large Medjool dates
  • 100 g Water (warm)
  • 60 g Coconut oil
  • 60 g Chocolate Protein powder
  • 20 g Cacao powder or baking cocoa
  • 50 g Pumpkin seeds
  • 50 g Sunflower seeds
  • 25 g Chia seeds
  • 20 g Hemp hearts
  • 25 g Cacao nibs
  • 30 g Dried Goji berries
  • 35 g Shredded coconut
  • 1/2 cup Toasted coconut chips or shredded coconut

"Afternoon pick-me-up" PROTEIN BALLS Directions

  1. Place toasted coconut chips in TM bowl.
  2. Mix on speed 7 for 10 seconds.
  3. Put aside in a bowl.
  4. Place dates, water and coconut oil in TM bowl.
  5. Mix speed 7 for 5 seconds.
  6. Add all other ingredients.
  7. Mix speed 2 on reverse for 10 seconds.
  8. The mixture will be super sticky.  Take 1 tablespoon balls and roll in the toasted coconut.  
  9. Place in the freezer (yes, that's right).  Eat them straight from freezer for a firmer texture.

Recipe notes

Great treat or extra protein boost in the afternoon.  Adapt whatever seeds, nuts you like.  I use whatever I have in the pantry.  Nut free for school lunches.

 

*VARIATIONS*

Dip the balls into cacao powder instead of coconut.
