Candied Heart Egg

An absolutely mouth watering treat when enjoyed warm or cold!!  Eating eggs has never been so much like eating caramel candy!

Ingredients

For 4 Person(s)

  • 35 g Soy Sauce
  • 35 g Mirin
  • 60 g Water (sauce)
  • 400 g Water (for steaming)
  • 20 g Brown Sugar
  • 6 eggs

Candied Heart Egg Directions

  1. 1.   Place soy sauce, mirin, 60g water, brown sugar into TM bowl.  Set 3 min/100 degrees/Speed 1.5
  2. 2.  Pour out into a bowl to let cool.
  3. 3.  Place chilled eggs into simmer basket.  Pour 400g of water into TM bowl.  **Set to steam: 11 minutes/Varoma/Speed 1.
  4. 4.  Take out simmer basket with spatula and run eggs under cold water immediately to stop cooking process.
  5. 5.  Peel all the eggs carefully.
  6. 6.  Pour the cooled sauce and peeled eggs into a ziplock bag.  Squeeze out all the air.  Close securely.
  7. 7.  Leave eggs overnight in the fridge to marinate.  Turn over occasionally to make sure even colouring!
  8. 8.  Cut open or take a bite into the Candied heart egg and marvel at the creation!

Recipe notes

*Prep and cook time does not include marinating time!

**cooking time may vary depending on how you like your eggs:

11 minutes for runny (egg yold liquid, egg white firm)

12 minutes for soft (egg yolk soft)

13 minutes for hard (egg yolk firm)

Using eggs at room temperature, smaller eggs or hot water will shorten cooking time.  Do note these differences when setting the time.

***Marinating sauce can also be adjusted to personal taste.  Can other spices like anise to give it added flavour.

*Can be eaten as is.  Or can cut open and put on top of hot steaming Ramen!
