A great "Pick Me Up Snack" when you need Energy TO GO!!

Northern Lights

  • 80 ml Buckwheat
  • 250 ml Unsalted nuts
  • 250 ml Dried fruits
  • 60 ml unsweetened shredded coconut
  • 80 ml mixed seeds, flax, chia, sunflower or pumpkin5
  • 60 ml Honey
  • 125 ml Unsalted Butter
  • 5 ml Vanilla Extract

Healthy Energy Bars Directions

  1. After milling buckwheat  set aside
  2. After chopping nuts add to buckwheat flour and set aside
  3. After Chopping mixed fruits let sit for a few minutes till sticky and add to flour and nuts

Recipe notes

Preheat Oven to 350 degrees (175 C)




Grind buckwheat  10 seconds  Speed 8-10   Set aside

Chop nuts   7 Seconds  Speed 5  Set aside

Chop fruits (may use cranberries, apricots, raisins, cherries, dates, figs, etc) any combo Chop 2 minutes till fine Speed 6-8


Combine all dry ingredients including fruit in a bowl and set aside.


In ™ bowl melt butter & Honey   2 minutes  90 degrees  Speed 2


Stir in Vanilla


Add dry ingredients to bowl and Stir at 2.5 - 3 for 1.5 minutes


Poiunt out on parchement and roll between two parchement pieces about 1/4 inch thick to approx 8 x 8 size.

Bake for 20 - 25 minutes until set and lightly brown.


Let cool and cut into bars.
