Vegan chocolate granola bars


These granola bars are super easy and delicious! They can be made nut-free for school lunch boxes and are great for a post work-out snack or just munching on in between meals or after school.

Chocolate syrup

  • 175 grams brown rice syrup or agave
  • 2 tablespoons nut butter eg, almond, cashew, peanut or for nut-free 1 heaped T coconut oil
  • 2 tablespoons unsweetened cocoa

Dry ingredients

  • 180 grams rolled oats
  • 50 grams rice crisp cereal
  • 35 grams hemp seeds
  • 35 grams sunflower seeds
  • 35 grams pumpkin seeds/pepitas
  • 20 grams shredded coconut
  • 2 tablespoons chia seeds
  • 2 tablespoons sesame seeds
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 30 grams dairy-free chocolate chips, optional

Vegan chocolate granola bars Directions

  1. Line a square baking dish with baking paper/parchment
  2. Pre-heat oven to 180c/350f
  3. Mix syrup, nut butter/coconut oil and cocoa for 3-4 min/60 degrees/sp3
  4. Once melted and combined, add all remaining dry ingredients.
  5. Mix 20-30sec/speed 3/counter-clockwise operation Use spatula to scrape sides if needed.
  6. Transfer mixture into prepared dish. Spread evenly and press firmly into dish. (The back of a spoon works well). Bake for 10-15 min @ 180c/350f
  7. Remove from oven and score surface into 6 even columns, then in half again to provide 12 even portions. This will aide cutting later.
  8. Once cool to touch, transfer to fridge to cool completely. Store in fridge. freezes well.

Recipe notes

Omit and replace any nuts or seeds you prefer!

Omit cocoa powder if you prefer!
