Ingredients

Soup

  • 20 Grams Ginger slices
  • 2 Cloves Garlic
  • 100 Grams Onion
  • 20 Grams Olive oil
  • 400 Grams Butternut Squash pieces
  • 750 Grams Water
  • 1/2 Teaspoon Salt and pepper
  • 1 Heaping teaspoon Veggie stock paste
  • 125 Grams Soaked cashews
  • 1/2 Teaspoon Pumpkin pie spice

Butternut Squash Soup Directions

  1. Place ginger slices , garlic and onion in bowl, 5 seconds speed 5, scrape down sides of bowl
  2. add oil and saute, 3 min at 120 speed 2
  3. add squash pieces and chop, 15 sec speed 4
  4.  add water, veggie stock paste, salt, pepper, and cashews, cook 15 min at 100 speed 2
  5. add pumpkin pie spice, blend 1 min starting at speed 5 then increasing to speed 10
  6.
